Season it Right!

Spices are usually synonyms with Indian food. However few really know the condiments and the fresh seasoning that go in. While we do use herbs too, nothing like fresh seasoning agents. During one of my camera-adventures at the Dadar Vegetable Market, I came across this stall. And I must tell you the lemon’s especially looked so fresh that I could feel the tang on my lips just looking at them. Although I don’t know what all the items sold are, I will not guess. People who can help please do so unhesitatingly, I look forward to the enlightening comments.

First Column (Bottom to Top): Hot Green Chilies, Lemons, Lemons, Chilies, Mild Chilies, Coriander.
Second Column (Bottom to Top): Ginger, Lemons.
Third Column (Bottom to Top): Hot Green Chilies, Mild Chilies, Curry Leaves.

      Not really Judith…its roasted mildly in salt and little old and eaten semi raw with potato vadas…considered quite a delicacy!

    I just looked up a recipe for potato vadas. They sound DELICIOUS (and hard to make) — and probably anything would go good with them!
    It’s true, at least with Mexican food, a mild chile roasted and salted is mighty tasty and not necessarily TOO spicy for a wimpy American palate.

      Not really Judith, they are quite easy to make, i have tried my hand at it sometimes…I will certainly share my version soon, but for now this looks quite an easy way to make them
