This is a frequent sight around roadside stalls, as cooks get their knives sharpened. this is nothing but a gear that works in tandem with the bike chain so it’s quite a simple mechanism really. I’m sorry I couldn’t get a clearer shot, but you can get a general drift of things. I find it quite cool how commonsense can help create awesome and usable technology!
