Bhutta’s or Maize (or corn as it is also known), tastes best when roast on a beds of coals. While the one with yellow kernels is sweet, while I prefer the tasteless white pearly ones better. And having a well roasted corn with lemon, salt and spice seasoning while strolling on the beach feels like bliss!
It’s interesting how in Mexico (another hot climate) corn is roasted and enjoyed with mayonnaise/cheese, lime juice and spices — very similar treatment, I think.
But in the US the favorite is sweet corn simply boiled or steamed VERY briefly, buttered and eaten right then and there.
Also bliss!!!!!! (It is corn season right now.)

Aahhh Judith, being in a liberalized nation, our palate is used to the american style corn…but mayo and cheese sounds interesting..
