In Maharashtra, we love puff breads, lovingly called as pav. We can eat pav with just about anything — Vada pav, tikki pav, pav manchurian, samosa pav, bhajji pav, masala pav, dabeli, pav bhaaji, omelette pav, bhurji pav, kheema pav, bun maska (and a special variant with mixed fruit jam too) basically everything! This here is a classic ‘misal pav’, which is a rich and spicy gravy with farsan, pav, and rassa for additional tang. It’s usually garnished with raw onions and fresh lime juice. The health conscious usually opt for Usal pav, a version sans the farsan. If its too spicy for your buds, you can try the dahi misal, where the misal is laced with fresh curd. Bon appetite!
